Comfort food holds a special place in our hearts, often reminding us of cherished moments and flavors. One of my all-time favorites is the Energy Ball, a delightful treat that has gained popularity beyond my immediate circle, reaching friends in Sweden, Jamaica, Canada, and the United States.
Every night, I look forward to starting my day with an Energy Ball. Even on days when my usual breakfast items are unavailable, the combination of an Energy Ball and a steaming cup of Blue Mountain coffee—renowned globally—makes me content. These treats are perfect for long journeys, keeping me away from overpriced airport snacks and ensuring I have a nutritious breakfast on-the-go. Each morning, I take a moment to express gratitude for another day, a good cup of coffee, and my beloved Energy Ball. Life truly feels good!
The Origin of My Favorite Snack
The idea for my Energy Balls came from my quest for healthy, no-cook options that could withstand the hot Jamaican climate. They needed to be easy to prepare and sustaining. While browsing online, I discovered a simple recipe for no-bake energy bites, which inspired my creation.

Adapting the Recipe for More Flavor
My enthusiasm for experimenting led me to elevate the original recipe. My husband gathers fresh coconuts, carefully peeling them to reveal the moist inner flesh.
He then grates the coconut, which significantly enhances the mixture's texture. When I'm in the US, I typically use packaged dried coconut, which tends to make my Energy Balls drier. To counteract this, I often incorporate coconut butter, which my daughter keeps stocked.
The next step involves adding gluten-free rolled oats, specifically Bob's Red Mill, which I sprinkle over the grated coconut. I generously mix in Extra Dark Hershey’s Cocoa because I believe chocolate is essential for a happy life. The dark chocolate's high flavanol content provides a wealth of antioxidants.
Chia seeds are another addition, offering extra protein, though I enjoy the texture of the whole seeds. I also include chunky peanut butter for a satisfying crunch and local honey for a touch of sweetness to balance the cocoa's bitterness. A hint of vanilla and, if available, almond extract brings everything together.
Creating the Energy Balls
After mixing all the ingredients, I form them into balls, using a six-pack egg container for transport if needed. I typically store them in the freezer to maintain their freshness, although the refrigerator works well too. These delightful bites rarely last long on the table!
Versatile and Adaptable
The versatility of this recipe is one of its best features. You can easily form the mixture into balls or press it into a pan and cut it into bars. I enjoy rolling some in toasted sesame seeds for added flavor, and one time, I mixed in dark cherry jam for a Black Forest-inspired treat. The possibilities are truly endless!
